hmmm I don't know about stuff like this. It seems that if I want health, I'll eat blueberries. Then when I need a cake-like treat... I'll eat cake. Much more satisfying on all counts, mostly because I think a six-year old should be able to pronounce the ingredients for something to really be good for me. :)

ay, i wish! for me, since 99% of what i eat is healthy (thanks to la meal plan), finding something like this is great. if i really want cake... i'll eat an entire cake. lol. just joking, but in all seriousness, i look at cake and gain a pound. so if i can eat a chocolate muffin that tastes like chocolate muffin and manages to give me a great dose of protein and fibre, i'm in!
in the meantime, i'll just visit your site and live vicariously through ya! ;)

I just made a super gooey chocolate cake, and you would love, and you would never know I added in a 1/2 cup of very pureed sauteed spinach. Seriously. I don't kid about stuff like that. At least it's about as close to an improvement as I get these days, and previous days of trying to find substitutes and always feeling deprived.

mmm sounds like one of the "deceptively delicious" recipes (have you checked out that cookbook? lots of purees added to great tasting foods).
one thing about vitalicious muffins etc - in no way do you feel deprived! they are super-rich and filling - and all natural, no preservatives etc.
anyways - sounds like a great recipe - feel free to post it!
